Rooted in centuries of Japanese tradition, Nyotaimori — the art of presenting sushi upon the human form — transforms dining into something far more profound. It is a meditation on beauty, restraint, and presence.

At KOKU, this ritual is reborn for the modern connoisseur. Our curated models, trained in stillness and composure, become living canvases upon which our master itamae presents his finest creations.

Our itamae brings over two decades of kaiseki and omakase mastery.

Each piece — from Hokkaido uni to A5 wagyu nigiri to seasonal temaki — is composed directly on the canvas of living warmth, each placement deliberate and precise.

03:TOKUBETSU — EXCLUSIVITY
